Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
1/4 cup balsamic glaze
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella cheese, sliced
1/4 cup fresh basil leaves
Balsamic glaze, for drizzling
Directions:
Season the chicken breasts with salt and pepper on both sides.
In a skillet, heat olive oil over medium-high heat.
Add the seasoned chicken breasts to the skillet and cook for 6-8 minutes on each side, or until cooked through and golden brown.
During the last few minutes of cooking, brush the chicken breasts with balsamic glaze, allowing it to caramelize and coat the chicken.
Remove the chicken from the skillet and let it rest for a few minutes before slicing.
In a large bowl, combine the cherry tomatoes, fresh mozzarella slices, and basil leaves.
Add the sliced chicken on top of the salad ingredients.
Drizzle with additional balsamic glaze before serving.
